The gathering drew malt enthusiasts, Michelin-starred chefs, and luxury retail innovators—a cross-section reflecting how whisky has transcended nightlife venues to become integral to refined lifestyle experiences.
Four award-winning Paul John expressions formed the evening's backbone, each paired with thoughtfully designed courses that created dialogue between food and spirit. The progression began with Paul John Brilliance, the unpeated flagship that anchors the distillery's philosophy. Served with Bocconcini Cracker featuring grilled zucchini, asparagus, herb dressing, toasted pine nuts, and malta orange zest, the pairing highlighted Brilliance's clean, accessible character through the first course's fresh, bright notes.
The second expression, Paul John Port Select Cask, drew its distinctive warmth from Portuguese Port wine casks, introducing richness and dried fruit complexity. Guests encountered this through Wine Glazed Sweet Potato Gyza—combining sweet potato, lemongrass, Thai bird chillies, and burnt honey glaze—or Sicilian Prawns Gyza with Sicilian lemon zest, garlic, and Thai chilli. Paul John Madeira Select Cask represented a more delicate proposition, finished in casks from the Portuguese island renowned for its nutty, oxidative character. The spirit's subtle complexity found its match in either Truffle Risotto—prepared with Arborio rice, Parmigiano Reggiano, tempura enoki, shiitake, and truffle oil—or Sous Vide Chicken accompanied by soy-honey jus glaze and creamy cauliflower puree.
