Facing this surge, hotel and restaurant operators are contemplating increases of up to ₹50 per plate to absorb the additional expenses, according to industry sources. The situation has become more challenging due to supply constraints that have made it difficult for establishments to procure cylinders in adequate quantities.

Some operators have been forced to resort to purchasing gas from the open market at a premium of roughly ₹2,000, further straining their bottom lines. Restaurant owners emphasize that the rise in fuel costs directly translates to higher food preparation expenses, leaving them with few options other than adjusting menu prices.

The broader context involves global supply disruptions affecting oil and gas availability, which have contributed to elevated input costs across the hospitality sector. Unless these cost pressures ease, additional price revisions appear inevitable.

The impact extends beyond biryani. Vendors serving Irani chai are also considering similar price adjustments in response to comparable cost pressures. Regular customers of these establishments may soon notice the financial burden being passed on to them, as business operators warn that price stability cannot be assured without relief in underlying costs.
