Blue Tokai Coffee Roasters Inaugurates Second Flagship Venue in Hyderabad
Hyderabad has become a significant hub for Blue Tokai Coffee Roasters, India's leading specialty coffee brand. The company marked another milestone by unveiling Blue Tokai Origins at Banjara Hills, establishing its second flagship establishment in the city within a span of less than six months.
Co-Founder Shivam Shahi highlighted the city's distinctive appeal: "Hyderabad stands alone as the only market where we've established two flagships in such a brief timeframe. The residents here demonstrate a genuine passion for understanding the intricate process behind exceptional coffee. This level of engagement drives our commitment to invest and grow in this market for the long term."
The flagship venue introduces visitors to an extensive portfolio of India's most exclusive micro-lots paired with meals designed by accomplished culinary professionals. The space celebrates Indian coffee estates, distinct regional characteristics, and diverse preparation techniques, emphasizing the brand's commitment to supporting coffee farmers.
A standout feature is the Play Bar, which maintains experimental coffee selections at their optimal flavor profile within climate-controlled conditions. The rotating assortment, curated monthly by Blue Tokai's roasting specialists, showcases innovative approaches including lots processed using farm-derived cultures, barrel-aged varieties, and beans from emerging coffee regions such as Meghalaya. Visitors can sample coffee prepared using seven different brewing techniques, encompassing methods like Chemex, Syphon, and Slow Drip.
The venue also offers Nitro Cold Brew served through a tap system, featuring nitrogen-infused single-origin cold brew created using proprietary extraction technology designed to unlock a broader spectrum of taste notes.
Culinary Partnership
The food program was developed in collaboration with Auroni Mookerjee, a prominent Indian chef recognized for his contributions to the culinary scene. Mookerjee has worked with Delhi-based Diva Group under Chef Ritu Dalmia, and led kitchen operations at Sienna Store & Cafe and The Salt House in Kolkata.
His approach emphasizes flavor-driven cuisine, resulting in a menu that combines approachable comfort with refined execution. Signature offerings include handmade pasta with creative preparations such as Chilli Crunch Carbonara, artisanal club sandwiches and open-faced preparations featuring sourdough from Suchali's Artisan Bakehouse, and a dessert selection ranging from traditional tiramisu to innovative options like Coconut Berry Lamington.
Selected dishes from this curated collection are also available at Blue Tokai's other neighborhood locations.
Community Engagement
The space functions as a gathering point for Hyderabad's coffee enthusiast community, hosting cupping sessions, educational workshops, and cultural programming that foster knowledge-sharing and connection.
Shahi elaborated on the venue's purpose: "Origins welcomes anyone seeking to deepen their coffee knowledge and appreciation. Through conversations with skilled baristas, tasting experiences, or direct interaction with coffee producers, this space bridges the gap between growers, roasters, and consumers. We encourage questions and curiosity here."
Rapid Expansion
Since launching operations in November, Blue Tokai has established nine locations throughout Hyderabad. Each venue serves distinct purposes within the brand's portfolio—from casual neighborhood cafes offering straightforward espresso drinks and breakfast items at Sattva Knowledge Park to social dining experiences at Gandipet, alongside the comprehensive flagship experiences at Jubilee Hills and Banjara Hills.
"Hyderabad has felt like a natural fit since our initial opening. We're committed to being woven into the city's varied lifestyle patterns, and we're targeting the launch of 10 additional locations over the next six months," Shahi stated.
